Kids Chicken Nuggets



I loved chicken nuggets as a kid, and to this day I love to eat them; fond memories of a childhood spent climbing trees and riding my bike in the summer sun. I’ve cut my chicken breast into nugget-like chunks but you can also cut them into strips for tenders. These are oven baked to reduce fat content but you can pan fry if you desire.

Prep time: 15 Minutes
Cooking time: 12 minutes
1 Breast feeds two hungry kids

  • 1 organic chicken breast
  • ½ cup of panko
  • 30g parmesan
  • 1/8 teaspoon garlic powder
  • 2 eggs, lightly beaten
  • pinch of salt and pepper
  • drizzle of oil
  1. Dust the chicken in the salt, pepper and garlic powder. Place eggs in a bowl. Combine panko and cheese in another bowl. Dip chicken in the egg and completely cover in breadcrumb mixture.
  2. Place baking paper on a baking tray and line up nuggets. Drizzle with olive oil and bake until cooked through, around 12 minutes.
